This recipe is a perfect way to get some protein and flax seed into a child's diet.
Mini Chocolate Chip Muffins
Mix all the dry ingredients

4 cups Flour (for less carbs use 3 cups flour and 1 cup coconut flour)
¼ cup ground flax seed
6 scoops of chocolate protein powder
2 tablespoons baking powder
1 teaspoon salt
½ tablespoon cinnamon (optional if you want a chocolate cinnamon outcome)
In a separate bowl mix the wet ingredients
4 eggs whisked
2 ½ cup milk
1 cup sour cream
2/3 cup sugar/brown sugar combo or use all monk fruit sugar (that’s what I use)
2 sticks melted butter
2 teaspoon vanilla extract
Combine the wet and dry ingredients and stir until just combined.
10 oz dark chocolate chips
Stir in the chips
Bake at 400 degree’s for about10-13 minutes. Until the center of muffin comes out clean.
I mix it up and make mini muffins and regular size muffins. I freeze them in little bags ready to go.
